Greek Potato Salad

Potato Salad




Ingredients:

  • 2 middle sized potatoes
  • 2 fresh onions
  • 1 big dried onion
  • parsley
  • the juice of a big lemon
  • half a cup of olive oil
  • salt or pepper if you like
Preparation:

First of all we wash and pill the potatoes, then we drop them into a large bowl filled with water in order to boil them. As they are being boiled we add some salt. When they are finished we dry them. As they are still hot we take a spoon or a fork and we melt them by applying pressure. When we are done with this, we add the mixture of olive oil and lemon and we mix the potatoes. Finally we add the fresh and the dry onions after we chop them and the parsley.

How to serve it:

You can serve it cool in small bowls.
